To supply the right fuel to ensure our bodies are performing at their best, thats why.
Food that is flavourless will be low in essential minerals. Thats why there are so many additives like processed sugar and preservatives. Thousands of compounds are produced by plants that are not essential to life but it's these non-essential compouds that give plant species individuality in colour, flavour, fragrance, taste, texture etc. Fresh wholefoods that have plenty of strong flavours and fragrances should have high amounts of minerals, essential for the various processes conducted at cellular level.

Many industrially developed foods we comsume, are too low in nutrients to promote good, long term health. Organic food can still be poor in nutrients. Organic crops are produced without the application of chemical fertilizers or pesticides. This does not address the fact that the plant still requires the right balance of minerals and trace elements in the soil to produce a high quality food source.
A healthy structure within the soil which is rich in bioactivity will provide a habitat that ensures a plant is able to absorb what it needs. Plants rely on microscopic bacteria and fungi to release essential minerals from rock particles which are then absorbed into the plant system.
Minerals in the soil control the metabolism of life, depending on the fertility and condition of the soil will dictate how healthy we are.
